  1. This Vegetable Broth is amazing! I made it exactly as directed and even added some leaves of spinach to it for the extra iron. I found that if I really squeezed the boiled vegetables in the strainer, I could easily get 10 cups of broth to use in soups!

2. So far this Lent, I did make the West African Peanut Soup and

the cream of cauliflower soup, both with my own vegetable broth. There were no leftovers so I consider that a success.

3. Fish foil wrap was also a big hit. I wrapped a piece of fish with sliced red potatoes, asparagus, butter, cajun seasoning (that I also put together myself), lemon juice, and some parmesan cheese.

Note to self: Make two of these for the men. One wasn’t enough to fill them up.

4. But this week we have two Lenten birthdays, and so the healthy cooking is making way for a trip to Arthur Treacher! – not fish fry

5. So part of my slow blogging last week was due to another medical mishap. My doctor found a breast lump on her exam. Now this was something I found myself years ago and it wasn’t getting bigger or changing or anything, but as soon as she found it, she seemed very concerned. So I was scheduled for a mammogram and an ultrasound.

It’s funny but until then, this lump didn’t hurt at all. After seeing her that breast hurt all. the. time. And I started kicking myself for not doing anything about it sooner. I’m writing a post about the entire experience but the bottom line is, it’s just fat and fibrous tissue. Or as I told Mr. Pete, the infrastructure is starting to go. Everything is fine.

And now it doesn’t hurt anymore – funny thing that.

6. I have three flute gigs coming up that I managed to scrounge around and get. One of them is a confirmation at a nearby parish, so I’ll be playing for the bishop! I’m rather enjoying the variety.

7. I am very grateful that we didn’t follow the norms of our time and only have two children. My oldest lives 8 hours away and my second is moving to Bali, Indonesia for nine weeks. If we had stopped at two, Mr. Pete and I would be all alone for Easter. Instead, we will have four of our children around us as well as a grandchild. The Lord truly is kind and merciful.
