Gluten-Free living doesn’t feel that difficult anymore … At least not until Lent!

Why is that? Maybe it’s because the go-to proteins of chicken and beef are off-limits at least once a week (which means you can kiss those leftovers goodbye too). Maybe it’s because fish on Friday if you’re not a big fish fan makes eating a little daunting as well. If you’re gluten-free you can’t exactly scarf down a box of Mrs. Paul’s fish sticks!

This is my 9th Lent living Gluten Free and this time, I want to make experimenting with healthier, tastier foods as part of my Lenten Journey. Here’s what I’ve come up with for a start.

Vanilla Chai Tea Pancakes

Yep. Fat Tuesday is known for it’s panakes. But this simple recipe from the Against All grains Blog looks simple and tasty. I’m intrigued by cooking with tea. Having some of these stored away in the fridge might be just the thing for quick midday meals.

Carrot Ginger Soup using Vegetable Broth

Anyone with a bad gut knows that bone broth is the best medicine for an aching tummy. But vegetable broth can be helpful too and maybe even a tad more cost-effective right now! This Carrog Ginger Soup recipe comes with instructions for vegetable broth that you can make now and store away for later. The soup might not appeal to my granddaughter, but I think my husband and older kids will appreciate these flavors.

Cream of Cauliflower

I really am giving up potatoes this lent. Part of that is to keep my doctor happy by keeping my blood sugar down. My family loves potato soup during Lent, but this will keep them happy because of it’s creamy texture, and it will keep us all healthier by keeping or carbs low!

10-Vegetable Soup

What the heck. If you’re in the vegetable aisle and you have that vegetable stock in the freezer, this soup will keep you feeling warm and healthy on a cool March night!

West African Peanut Soup

I am super intrigued with this one. The idea of cooking with peanut butter just appeals to me. I also like the idea that I can cook the soup for Friday and then add some chicken for Saturday! Wonderful!

Veggie Wraps

Lettuce Wraps are a gluten-free woman’s best fast-food friend. And this recipe makes them look more inviting and fun to make at home.

Gluten-Free Cashew Bread

I have lots of soups on this list! The family will probably sop up their bowls with some brown bread, but a gluten-free gal can’t do that. This cashew bread is perfect for that. I never had any luck with using this bread for sandwiches (and hats off to you if you have) but it’s perfect for tearing into chunks and dipping into soup or dip!

My suggestion is if you’re starting out is to make the bread and the vegetable stock first! Then you’ll be all set for whatever soup you want to make for a meatless Friday!
